Champagne Cherry Poke Cake for Valentine’s Day!

I have to share the most simple, light and airy, and absolutely delicious cake my son made last night.  I printed this off last year and need to thank The First Year  for this delicious treat she shared.  So glad we finally got around to making it.

Yes, it was my first day of eating clean and I cheated to enjoy a couple bites.  But the rest of my day was killer so still a drastic improvement as far as food choices go for me.   Tomorrow, I will try again!   🙂

Every year for Valentine’s Day I always prepare a meal for my kids that is all heart shaped or red and pink with holiday themed plates and decor.  Guess what we will be having for dessert?

Champagne Cherry Poke Cake Jello Dunan Hines

Champagne Cherry Poke Cake

Ingredients:

  • 1 box white cake mix, plus ingredients on back of box, “replace the water with champagne”  I bought Andre Strawberry Moscato
  • 1 box cherry flavored jello mix, 3 oz.
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 container cool whip, thawed
  • cherries, 16-20 or one for each piece of cake
  • 1-2 squares white chocolate Candiquik, depending on how many cherries you’re dipping
  • 1 tsp vegetable shortening
  • 1-2 containers gold glitter sprinkles

 

Directions:

  1. Bake the cake mix according to the directions on the package, however substitute the water for champagne, so if you box calls for 1 cup water, use 1 cup champagne.
  2. Allow the cake to cool completely before poking holes.
  3. Once cooled, use a straw to poke holes all over the top of the cake.
  4. Combine the cherry jello mix and 1 cup boiling water, and stir until dissolved.
  5. Add in the 1/2 cup cold water, and stir again.
  6. Pour the jello mixture evenly over the cake, allowing it to seep into the holes you created.
  7. Cover and refrigerate for 2 hours.
  8. Before serving, top the cake with cool whip and, if desired, garnish each piece with a cherry dipped in gold sprinkles.
  • Pour the gold sprinkles in a very small bowl.
  • Wash and dry the cherries.  Melt 1 square of white chocolate candiquik with vegetable shortening in the microwave for 1 minute and 30 seconds on 50% power.  Continue to microwave on 50% power in 20 second intervals until the chocolate is melted.
  • Dip one cherry at a time in the melted chocolate, allowing the excess chocolate to fall back into the bowl.
  • Then dip each cherry into the bowl with gold sprinkles.  You may have to shake or rotate the sprinkles to get them to cover all of the chocolate.  Place on a plate to harden until you’re ready to use.

 

We kept it simple and didn’t make the chocolate covered cherries this time. Maybe next time cause they look delicious.   Last night we just used maraschino cherries as a garnish and my boys were thrilled.
